Marco Veneruso has been appointed Executive Chef of the Four Seasons Hotel Prague

The Four Seasons Hotel Prague announces the appointment of Michelin-starred Marco Veneruso as Executive Chef. Veneruso arrived in Prague with culinary experience and expertise gained in restaurants across Italy and Asia, where he earned his first Michelin star running an Italian hotel restaurant in Beijing, China. .

Drawing on many inspirations, Veneruso’s debut menu elevates the cuisine of CottoCrudo and the city beyond. Saint-Pierre with pork cheek, eggnog, champagne and caviar comes from his love of French sparkling wine, while his signature Pasta uses his “special ingredient”, the strained liquid of anchovies marinated in coarse salt for a month. The flavor is one of the oldest he remembers from his childhood in southern Italy.

Veneruso also oversees the hotel’s other restaurants, including the seasonal MIRU Japanese Experience Restaurant on a private terrace with great views of Prague Castle and Charles Bridge.

Born in Naples and raised in the town of Campagna, he fell in love with southern Italian ingredients while helping out on his grandparents’ farm, including cooking with his grandmother in the kitchen.

After graduating from a culinary school A tavola con lo Chef in Rome, Veneruso traveled to Lombardy to become an apprentice at the first of several Michelin-starred restaurants he was part of throughout his career. In 2010, he began an eight-year run with Four Seasons, joining the company’s property in Florence as chef de partie and rising to junior sous chef as his signature restaurant Il Palagio was awarded a Michelin star in 2011. He stayed for five years. , working with Vito Mollica, whom he calls his mentor, then spent three years as a chef de cuisine working with Sergio Mei at the Four Seasons Hotel Milano. In 2018, armed with an in-depth knowledge of his native cuisine, Veneruso traveled to Asia as executive chef in Beijing, working with three-star Michelin chef Niko Romito. Under Veneruso’s management, the Italian hotel and restaurant earned a Michelin star in less than two years.
